What is Custom Food Manufacturing?


Have you ever heard the expression “WOW, you ought to bottle that”  Well that’s where custom manufacturing starts. Custom Food Manufacturing is the process of creating unique food products for the market place.  


Why should I consider this process?


Consumer palettes are changing. especially since the onslaught of television food shows. Top chefs are creating magical dishes everyday on TV and the public is craving these new taste profiles.  Food dishes that worked back in the 70s, 80s and 90s may not work today.  Today’s consumer palette is more sophisticated than ever before, and restaurants and food companies realize the need to adapt to this evolution.

A food chemist, an executive chef, 21 years of experience, and a state of the art production facility are just a few of the reasons to choose Arcobasso.  These are just some of the ways that we create a delightful customer experience.


How long will it take?


Approximately 1-3 months. After signing a Non-Disclosure Agreement, our food chemist starts the process of creating samples.  Once samples are approved by the customer, production is scheduled and finished product can usually be shipped to the customer in as little as three weeks.


What are my different packaging options?


For food service, we pack in gallons, liters, 5 gallon pails and drums. We can also pack individual pouches (from 4 oz to 128 oz). On the retail side, we offer a variety of 8 oz, 12 oz, and 16 oz glass and plastic containers.


What type of choices will i need to make?


There are many options in our custom manufacturing process. Some of the choices that the customer will need to make are: final product taste, packaging and label design.  All of the mandatory food regulation issues, bar coding, and nutritional facts/ingredient statements are handled by Arcobasso Foods.


Who carries the inventory?


This will depend on whether the customer is receiving product through a distributor, or having product shipped directly to their location.


I need something new, but i don’t know what


We have an on-staff Chef who can assist customers with menu development and propose new flavor ideas.


How long will the product last?


Every product is a little different, but shelf life on most items has a minimum shelf life of 6 months, up to 12 months. Our Food Chemist will work with the customer to advise on shelf life.


How much will it cost?


Our smallest production run is 160 gallons.  So depending on your recipe and the costs of ingredients, prices will vary, but we will provide cost estimates in the early stages of development.


I only have 3 restaurants, will my volume be enough?


Arcobasso works with single unit restaurants as well as 1000 plus unit franchises. Consistency is key, and we focus on delivering quality and consistency to every customer, no matter what size.


What about label design?


Arcobasso  has an internal graphic design team, and we can produce stunning retail label designs. Customers are also free to choose any free-lance designer of their choice.
