Arcobasso has been creating custom dressings and sauces since 1987.  The company was founded on the concept of customization and great service, and that still holds true today.

We understand that in your business, timing is everything, and we take pride in our swift “speed to market” abilities. To keep your initial investment low, we offer production run minimums as low as 160 gallons.  We have the custom capabilities to service a variety of customers, including multi-unit restaurant chains, grocery store chains, and single unit operators as well.   1. Why should I use FlavrDough instead of the flavor additives I'm currently using?
    FlavrDough delivers intense flavor solutions for your baked goods where conventional flavor additives cannot. Because FlavrDough is incorporated right into your dough formulations, as opposed to topically applied, you can create baked goods that have an intense, even and consistent taste (no flavor "hot spots"). Furthermore, the flavor profile that FlavrDough delivers include the delicate (and often preferred) flavor notes, giving your baked goods a full range of flavor for your customers to enjoy. FlavrDough is heat-stable and therefore the flavor extracts will not flash off when exposed to high temperatures; FlavrDough can withstand temperatures of up to 625 F.
  2. I have spent a lot of time and effort developing my recipes and product formulations and do not want to have to repeat the exercises.
    FlavrDough is designed to work with your current, existing recipe formulations. Simply adjust the water concentration in your recipe down for the amount of FlavrDough added.
  3. How do I use FlavrDough properly? How much am I supposed to use?
    To use FlavrDough properly, reduce the water in your recipe by the amount of FlavrDough to be added and then mix the remaining water with FlavrDough before adding to your dough formulation. We recommend using between 1% and 2% of FlavrDough to total weight. However we do recognize that individual tastes vary, so you can adjust the amount of FlavrDough to deliver your preferred flavor intensity.
  4. How does FlavrDough affect the appearance of my finished baked goods?
    Unlike what happens when some conventional spices (for example, garlic) are incorporated into dough formulations, FlavrDough does not inhibit yeast activity nor does it break down flour's gluten strands. Therefore, your finished baked goods have great volume and enhanced flavor.
  5. How does FlavrDough work?
    Only premium flavor extracts are used in our emulsion system. FlavrDough acts as a protective conduit that delivers the extracts into the targeted food system. When heated, our emulsion releases the full strength of the extract into the food system, resulting in an intense flavor experience.
  6. How does Tapeko ensure consistency of functionality and flavor across various production runs of FlavrDough?
    FlavrDough is produced in a Hazard Analysis Critical Control Points (HACCP) and Good Manufacturing Practices (GMP) compliant facility. This allows us to ensure product quality, stability and most importantly consistency since every process, activity and operation associated with the production process is strictly documented. By repeating each step in the production process exactly as documented, we can be confident that each production run of FlavrDough mirrors the previous run in terms of functionality and flavor consistency.
  7. What makes FlavrDough so unique? Who else offers a similar product to FlavrDough?
    FlavrDough is a truly revolutionary flavor emulsion because it goes beyond the limitations of conventional powders and raw spices, easily delivering intense flavors into various food systems. FlavrDough also solves several flavor challenges in the commercial food industry:

  8. What happens if there is a flavor I want that is not available on your list?
    Please request new sample flavors with your sales person. New flavor development takes approximately 6 weeks.
  9. What is the shelf life of FlavrDough and how should I store it?
    FlavrDough has a shelf life of 12 months, when stored in a cool, dry environment. Once opened, FlavrDough should be refrigerated to maintain product freshness.
  10. How is FlavrDough packaged?
    FlavrDough is packed in 1 liter bottles (packed 6 per case), 4 x 1 gallons, 5 gallons, drums and totes.
  11. Is there a limit to the types of applications where I can use FlavrDough?
    While FlavrDough was specifically developed for applications in the Baking Industry, the full range of applications where you can use FlavrDough is only limited by your imagination. You can even combine several FlavrDough flavors to create your own unique flavor profiles such as our Mediterranean Savory Blend (Olive, Garlic, Oregano). Using Tapeko Olive flavoring vs olive oil can also be a very popular application and save on product costs.
  12. Is the product Kosher?
    Kosher FlavrDough is available. Letters of certification from the Vaad Hoeir of St. Louis (Missouri) for the full size 1 liter bottles and letters of certification from the Kashruth Council of Canada for the 4 oz. sample bottles attest that specific production runs are Kosher. All Kosher 1 liter products bear the symbol OV and all Kosher 4 oz. bottles bear the COR symbol.
